California Sushi in a Bowl
This sushi bowl is a version of a deconstructed California sushi roll. It offers a super easy way to enjoy a healthier meal with a unique freshness for dinner or lunch. It’s so simple and takes only about 25 minutes to make. Most California rolls use practical imitation crab, but that’s not for everyone; so, feel free to use the real thing; it will likely taste even better.

Ingredients:
. Soba noodles, pre-packaged (soft, not dry) with seasoning
[I used "Fortune Yaki-Soba Japanese Style Stir Fry Noodles with Seasoning Sauce." There are three individual servings included, but I only used two servings. I found the package in the refrigerated section with other Asian cold foods in the general fresh vegetable section].
. 8-ounce bag strip imitation crab, sliced to one inch bite size pieces – split between two people (of course, you can also use real crab)
. 1 cup water (this was required in the noodle packet instructions)
. ½ cup English cucumber, sliced and cut to bite size pieces (I cleaned out the inner seeds)
. 1 cup loosely packed carrot peels
. 1 avocado peeled, sliced or diced
. 1-2 (1/4 cup) green onion, sliced on diagonal ¼ inch wide
. 2 tablespoons canola oil
. 1 teaspoon soy sauce
. 1 teaspoon Hoisin sauce
. Bottle Sriracha mayonnaise
Optional: Sesame seeds – white and black
Instructions:
1. Chop all vegetables, avocado and “crab” before cooking the noodles and set aside until ready to top over the heated noodles in individual bowls.
2. Cook the noodles according to the package. My noodle package directions required me to first heat up two tablespoons of the oil in the skillet. Once the oil is heated, add the noodles, one cup water and the seasoning packets that came with the noodle bag.
3. To the noodles, add the soy sauce and hoisin sauce and stir well to distribute evenly.
4. Once the noodles are heated, add your desired volume of noodles to the bottom of the individual serving bowls. Top the noodles with the “crab”, vegetables and avocado. Optional: Sprinkle with sesame seeds. Drizzle with Sriracha mayonnaise sauce as desired.
