Pineapple and Mango Salsa over Brats/Hotdogs
This salsa is incredibly refreshing. It's also a very flexible salsa that pairs great with not only brats and hotdogs, but also tacos and grilled meats such as chicken and pork...even chips. For this particular recipe, pairing the salsa with any brat or hotdog elevates the brats/dogs to a higher level in flavor, hitting a homerun.

Prep Time: 15 Minutes
Cook Time: 10 Minutes (Brats or Hotdogs)
Suggested Tools:
· Medium bowl
· Utility chopping board
· Measuring cups

· Stir spoon
Salsa Ingredients:
· 2 cups fresh pineapple, peeled and finely chopped
· 1 cup fresh mango, finely chopped
· ½ cup red onion, finely minced
· ¼ cup fresh cilantro
· 1 tablespoon fresh lime juice
· ½ teaspoon salt
Optional: 1 tablespoon jalapeno, finely minced
Salsa Instructions:
1. Place the pineapple, mango, onion and cilantro in a medium bowl and stir gently. Then sprinkle the cilantro into the bowl and stir to combine. Sprinkle in half of the lime juice and stir; then repeat with the other half of the lime juice to combine well. Sprinkle salt around and stir to distribute evenly.
2. Place the salsa in the refrigerator until ready to use.
Brat/Hotdog Ingredients:
. Your choice of brat or a favorite hotdog (I used Aidells Chicken and Apple)
. A quality special bread bun of your choice. (I used fresh bakery torpedo rolls)
Brat/Hotdog Instructions:
1. I prefer to grill my brats/dogs on our gas barbecue grill. Feel free to choose an appropriate cooking method that you prefer since the focus here is on the salsa. Using the grill takes only about ten minutes on a heat of about 350 to 400 degrees. I go for dark grill marks on the meat which really gives that quintessential grill flavor...hmm...yum.
2. Slather your favorite condiments on the bun, add the meat and blanket it with this wow salsa.
