Fresh Pico de Gallo
Pico de Gallo, also known as salsa fresca or salsa Bandera, is a classic Mexican condiment that bursts with flavor. This fresh salsa is made with a medley of ripe tomatoes, onions, cilantro, jalapeños, and lime juice. It's a versatile dish that can be enjoyed with tortilla chips, tacos, burritos, or as a topping for grilled meats and fish.

Ingredients:
· 1 Cup tomato, diced well
· ½ Cup cilantro, chopped well
· 1/3 Cup yellow or red onion, diced well
· ½ Jalapeno or Serrano peppers, diced finely – Increase amount for increased heat
[Remove seeds before dicing]
· 2 Tablespoons lime juice, either bottled or fresh
· Kosher or table salt to taste
Optional: ½ Teaspoon cumin or more as desired
Instructions:
1. Place all ingredients in a medium sized bowl and stir to combine well.
2. Cover and keep in the refrigerator for at least thirty minutes before serving, to meld the flavors. It can stay fresh in the refrigerator for 3-4 days if stored properly, covered tightly.
