Salsa Verde aka Tomatillo Sauce

Brighten Up Your Meals with Tangy Salsa Verde


Fresh Salsa Verde (Tomatillo Sauce)


Salsa verde - also known as Tomatillo sauce - is a vibrant and tangy sauce that's a staple in Mexican cuisine. Made from tomatillos, a green fruit related to tomatoes, this versatile sauce can elevate a variety of dishes. From a zesty dip to a flavorful marinade, salsa verde is a must-try for any home cook.


I find making salsa verde to be quite fun, especially since I don't use tomatillos very often. For me, the process of roasting the tomatillos and blending them in a food processor is satisfying and rewarding.



Prep Time:  15 Minutes


Cook Time:  15 Minutes


Makes:  Approximately 1 ½ Cups


Suggested Tools:


·  Cutting board

·  Sharp knife

·  Medium bowl

. Spatula


Optional: Garlic press

 

Ingredients:


.  5 Tomatillos, husks peeled

· ½ Cup cilantro, roughly chopped

·  1/3 Cup yellow or white onions, roughly diced

·  ½ Jalapeno or Serrano peppers, roughly diced – Increase pepper amount for increased heat

·  2 Teaspoons garlic, chopped well

·  1 Tablespoon lime juice, either bottled or fresh

·  Kosher or table salt to taste

 

Instructions:


1.   Pre-heat oven to 425 degrees.

 

2.   Place rinsed tomatillos in a pan lined with aluminum foil.




3.   When the oven comes up to temperature, place the tomatillos in the oven and bake for 15-minutes. A little brown on the tomatillos will appear and that is fine.





4.   Once the tomatillos are cooled somewhat, add them to a food processor and run the processor until the tomatillos are totally emulsified. You will find that they have softened quite a bit while in the oven; so there is no need to cut them in half before placing in the food processor.




5.   Add the rest of the ingredients and continue to run the processor, again, until you reach your desired consistency.





Note:  Get a head start on your meal prep. This sauce can be made a few days in advance and stored in the refrigerator, covered, for up to 4-5 days. 


Here are some popular ways to use tomatillo sauce:  


As a Dip:

  • Serve with tortilla chips for a classic snack.

  • Dip vegetables like carrots, celery, or bell peppers.

  • Use as a dip/sauce for grilled meats or seafood.


As a Topping:

  • Drizzle over tacos, enchiladas, or burritos.  

  • Top nachos or quesadillas for extra flavor.  

  • Add to soups or stews for a zesty kick.

 

As a Marinade:

  • Marinate chicken, pork, or fish before grilling or baking.

  • Add a splash to your favorite marinade recipe.


As a Sauce:

  • Use as a pasta sauce for a unique twist.

  • Toss with roasted vegetables for a flavorful side dish.  

  • Add to rice or quinoa for a delicious and healthy meal.


Tips for using Tomatillo Sauce:

  • Adjust the heat level by adding more or less chili peppers to your recipe.

  • Store leftover sauce in an airtight container in the refrigerator for up to a week.
