Turkey Shepherd's Pie - Definition of Comfort Food

Easy Cozy "Leftover" Dinner



Transform your leftover Holiday turkey into a cozy, comforting meal with this hearty turkey shepherd's pie. Whether you prefer white or dark meat, this dish is a delicious way to use up your leftovers. Pile high with fluffy mashed potatoes and bake until golden brown. It's a one-pot wonder that's perfect for chilly nights.


Makes: 6 Servings


Prep Time:  25-30 Minutes


Cook Time:  40-45 Minutes



Suggested Tools:


·  Stock pot or Dutch Oven

·  Cutting board

·  Cutting knife

·  Vegetable peeler

·  Measuring cup

·  Measuring spoon

·  Stir spoon    

 

Ingredients:


·  2 ½ cups leftover cooked turkey, cut or hand torn to 1-2 pieces

·  Cooked mashed potatoes of your choice (preferably leftovers) – [I used leftover mashed unpeeled red potatoes, our family favorite].

·  3 Large carrots, peeled and cut to 1 – 1 ½ inches

·  1 Medium yellow onion, peeled and cut to 1 – ½ inches

·  1 ½ cups cleaned and sliced white mushrooms (or other vegetables noted below)

·  2 Teaspoons chopped garlic

·  2-3 cups leftover gravy [Since my gravy thickened overnight in the refrigerator, I thinned it

out with ½ cup of chicken broth on the stove].

·  2 Tablespoon extra virgin olive oil

·  2 Tablespoons butter

·  ½ Teaspoon dried sage

·  ½ Teaspoon dried oregano

·  ½ Teaspoon dried thyme (though I used fresh from my garden)

·  Salt and pepper to taste


Optional: Shredded cheese of your choice for topping.


Notes: 


- May use 1 ½ teaspoons of poultry seasoning in lieu of sage, oregano, thyme noted above.

- May exchange one of the listed vegetables with other leftover vegetables such as green

beans, corn, asparagus or bell pepper.

 

Instructions:


1. Add olive oil to stock pot or Dutch oven and bring up to medium heat. Add onions,

carrots, mushrooms (or other vegetable), garlic and spices, and sauté for about 15

minutes while stirring occasionally and until tender to the fork. You may choose to add

a lid to cook faster.




      2.  Add the cooked turkey to the cooked vegetables and stir to combine well.




      3.  Add the gravy to the turkey and vegetables and stir to mix well.




5.  Add the potatoes on top of the turkey mixture and smooth somewhat and then add

          two pats of butter on top.


      6.  If needed, place the casserole into an oven-proof casserole dish that is about 3.2

quarts in size or bake in the Dutch oven.


Optional: Sprinkle top of casserole with shredded cheese of your choice.




  1. Place the casserole/Dutch oven into a preheated 375-degree oven for 30-35 minutes and serve immediately.
